In case you missed it, Saveur Magazine recently announced that my blog is a finalist for the Best Baking & Desserts Blog award in the 2015 Saveur Blog Awards. I got the notification email from Saveur a few days before the news was made public the following Monday it was around 9:30AM, and I was sitting in a meeting with my coworkers discussing the intern role we were hoping to fill, when my phone buzzed with a new email contaning the subject line:

You know how in movies sometimes, when somebody receives any kind of shocking news, everything else goes blurry the lights fade, the sounds mute, and theres a strange ringing sound in your ears? Well, thats kinda what happened to me! I spent the rest of the meeting fighting the urge to grab my phone, run out the room, shriek and do several cartwheels down the hallway. When the meeting finally ended, I took a couple of deep breaths, shakily opened the email, did a little jig, and spent the rest of the day grinning like a maniac.
I wish I could have ended there, but something odd happened. Later in the day, as the glow of the news faded, I proceeded to go into a weird state of denial. I spent the rest of the weekend in a mild state of quiet panic, regretting telling the handful of people I'd told since I was somewhat convinced that the entire thing was a cruel joke or hoax. I only finally chilled the frig out when, on Monday, I officially saw my blog listed along with the other finalists.


This nomination is especially meaningful for me because, a few years ago, when I was first nominated in 2013 for the Best Baking & Desserts Blog Award, I wasnt able to attend since the ceremony that year coincided with a rare family visit. I really, really regretted not being able to go I felt like I had missed the opportunity of a lifetime, to say the least. I really didnt think I would ever have the chance again, since its incredibly difficult to be re-nominated! So I cannot emphasize how grateful and thankful I am to have just made it to the finalists again this year (though of course, I wouldnt mind if you took the time to vote for me in my category, winkwink). I can finally go to the ceremony!!! And of course, theres no way Im missing it this year, come hell or high water. Really. I think the only thing that could potentially stop me is a zombie apocalypse. (And gosh, I said really a bunch of times in that paragraph, didn't I? Sorry.)
To officially celebrate making it to the finals, I whipped up this wonderful banana and chocolate crunch cake. Ive been wanting to make a banana cake for some time now to get rid of the crazy stack of frozen black bananas in my freezer. The banana cake recipe is adapted from the Momofuku Milk Bar cookbook, whose recipe for banana cake is the best Ive tried the final product straddles the line between a banana bread and cake, maintaining all the fudgy denseness that I love from banana bread but light enough to be able to eat and layer with a generous amount of frosting. To make it a little extra special, I decked the top of each cake with a generous amount of Valrhona chocolate crunch pearls (literally rice puffs covered in Valrhona chocolate), which gave the cakes the texture of a Nestle Crunch bar.

Some baker's notes:
- Plan ahead for this one and use the ripest bananas you can find for this recipe. Buy bananas that are ripe and let them get overly black and brown the riper they are, the more sugar in the fruit, and the more flavorful and caramelized the cake's flavor will be. Epicurious even has a guide that tells you how far in advance you should buy bananas and where you should them to get them to their ideal state. And if you're just not a planner, you can always use this neat trick from the Kitchn to ripen them in the oven.
- Valrhona chocolate pearls are available online at Valrhona's online store, or at Alternatively, you can find some in the chocolate and bulk section of Whole Foods supermarkets.
- If you want to instead use store-bought cookie spread like Biscoff or Speculoos instead of making your own, feel free to do so, but be sure to omit all the sugars added with the butter in the frosting recipe. Even if you do this, however, it will result in a much sweeter frosting than the one from the recipe I provide. I like making my own cookie butter because I can control the amount of sugar that goes in it (I prefer to make one that is less sweet than the store-bought version) and avoid the funky hydrogenated oils, though it admittedly doesn't last as long as the store-bought stuff.

"Best Ever" Carrot Cupcake with cream cheese frosting
Hey guys! This is probably one of my favourite cupcake recipes and I have made them countless times over the past year or two because they never fail to disappoint.
Now I am passing this awesome recipe on to you. Enjoy baking it!

Based off thecakemistress.coms recipe.
Ingredients

1 cup Brown Sugar
1 cup Vegetable Oil
3 Large Eggs
A pinch of Salt
1/2 teaspoon Bicarb Soda
2 cups Self Raising Flour
2 cups finely grated Carrot
1/2 cup Walnuts, finely chopped
1 teaspoon Cinnamon
1 teaspoon Nutmeg
The Cream Cheese Frosting
300g Icing sugar
125g Cream Cheese, cold
50g Unsalted Butter, room temp
Method
PART ONE (CUPCAKE)
2.) Finely grate the carrots until you get around 2 cupfuls of grated carrots.
Fine Grated carrots & leftover carrot sticks. EAT THEM, theyre healthy for you.
3.) Beat the sugar and oil together until thick
The cup of brown sugar & and oil well surrounding it.
4.) Add 1 egg at a time and keep beating until smooth
What it should look like BEATEN with 3 eggs & brown sugar with oil.
5.) Add in the Salt, Bicarb Soda, Carrots, Flour and Spices (the nutmeg & cinnamon)
All the ingredients are now added into my mixing bowl.
I put the carrots on top as they are the hardest to mix and would be stuck at the bottom.

6.) Use an electric mixer to beat all the ingredients together until batter is well mixed and smooth. (you can mix batter together with a spoon, however this will be extremely tedious and difficult because the carrots are heavy to mix through)
7.) Place batter in paper cupcake holders in a cupcake tray.
If you dont have any paper cupcake holders, like me, you must OIL VERY WELL the cupcake baking tray using a brush. (see picture below) This is so you can take out the baked cupcake without breaking it apart.

MUST DO THIS, or else cupcakes will stick to the tray and you will be VERY dissapointed.

8.) Bake for 15- 20 minutes until light golden, or until you poke a small stick into the cupcake (I usually use a chopstick) and no batter sticks to it.
Also, you may use your finger and press the middle of the cupcake to see if it springs back.
Note: Baking time may vary, mine took 5 minutes longer to bake. Just make sure to use the described methods above to test the cupcake. THESE TECHNIQUES APPLY TO ALL CUPCAKE BAKING.

BUT WAIT! The recipe is not over yet... the best part, cream cheese frosting still needs to be made.
Note: PLEASE WAIT AT LEAST 2 HOURS FOR THE CUPCAKES TO COOL OFF. If you put the frosting on straight away, it will just melt.
PART TWO (Cream Cheese Frosting)
1.) Beat the icing sugar and butter together with an electric mixer until well mixed.
2.) Add the cream cheese and beat until it is completely mixed through. (no lumps)
Note: If your cream cheese is too hard, you can cut them up into smaller blocks first before beating it together with the other ingredients.
3.) Continue beating until the frosting is light and fluffy, at least 5 minutes.
This is what the frosting should look like when beaten well.
4.) Spread the frosting with a butter knife or any tool that makes it easy for you.
5.) Sprinkle with leftover cinnamon powder. Then sprinkle with chopped/ crushed walnuts on top of the cupcakes.

Verdict
Definitely an easy cupcake to bake, requires not too much time.
The cupcake is soft, moist and awesome. The cream cheese frosting makes it even better (I never use normal frosting now since the day I discovered cream cheese frosting). The added cinnamon powder on top gives the cake a great smell and added taste and the crushed walnuts provides a balance of texture with its crunchiness.
This is truly a must- try 9/10 recipe.

Banana Ferrero Bundt Cake
I actually made this cake a few weeks back but I think its an appropriate tribute to Michele Ferrero who died age 89 on 14th February. He is the creator of Nutella and Ferrero Rocher chocolates amongst other confectionary delights. This cake actually came about by chance as I had a lot of Ferrero Rocher chocolates left after baking my Nutella Ferrero Rocher brownies. I looked around my kitchen to see what else I could use and spied the very brown bananas. I also found a tub of creme fraiche in my fridge which I bought for a recipe but never got round to using it. I decided to incorporate everything into a cake and used my bundt tin to make it look special. I was going to melt some Nutella to drizzle on top but I was in too much of a hurry.
The cake turned out beautifully as it had a lovely banana flavour with a good texture. It kept well for a few days and did not dry out mainly due to the creme fraiche in the cake. It felt like a treasure hunt in your mouth as you may or may not get the taste of Ferrero in each bite.

Note: I used double this recipe to fill my large bundt tin and had some batter leftover to make a small round cake
You can easily make a 18cm round cake with this recipe.
Ingredients
225g self-raising flour
225g light muscovado sugar
3 large eggs
80ml sunflower oil
2 ripe bananas
150ml creme fraiche
12 Ferrero Rocher chocolates, cut in half
- Preheat the oven to 180C.
- In a large bowl, mix the flour and sugar.
- Add in the eggs and sunflower oil and mix well.
- Add the bananas in chunks and the creme fraiche.
- Stir a few times then add in the chopped Ferrero Rocher chocolates.
- Pour into a large bundt tin and bake for about 45-50 minutes or until golden brown and a skewer inserted into the centre comes out clean.

Moist and oh so delicious...
While the contestants on MasterChef was shucking their 4-dozen oysters to make oyster terrines on T.V, I was busy in the kitchen slicing my apples as finely as I could. While my job is not quite comparable to their task, I was almost losing my patience and thinking in my head, Ill know better to stick with banana cakes next time!
Some days, Im just lazy like that. But in hindsight, its so worth it!
I was so keen to make this cake because this just shouts simple and homey to me. I also happen to adore cakes with fruits because I dont have to add too much sugar (everytime when I put sugar into my batter - I think of the diabetes episode on Oprah which was truly frightening).
I halved the amount of sugar in the recipe, and it was still a tad too sweet for my liking. That is just a personal preference.

Balzano Apple Cake
Adapted from New York Times 2004 and AlexandraCooks
Serves 8
- 1 stick butter, plus more for greasing pan (around 113 grams)
- parchment paper
- 2 eggs
- 1 cup sugar
- 1 vanilla bean ?
- 4 Fuji apples (I used 5 small Fuji apples)
- ½ cup flour
- 2 teaspoons baking powder
- ¼ teaspoon sea salt such as fleur de sel
- ½ cup milk at room temperature
- powdered sugar
Melt butter in small saucepan. Set aside. Beat together eggs and half of sugar in a bowl. Continue to beat while slowly adding remaining sugar until thick it should form a ribbon when dropped from spoon.
Split vanilla bean in half lengthwise. Scrape seeds into the egg-sugar mixture and add pod to melted butter.
Peel apples and cut straight down around the core into four big chunks. Discard the core then slice the apple pieces thinly.
Remove vanilla pod from butter and discard. Stir butter into sugar-egg mixture. Combine flour, salt and baking powder, then stir into batter alternating with the milk. Stir in apples, coating every piece with batter. Pour batter into pan.
Bake for 25 minutes, then rotate the pan. Bake for 25 to 30 minutes more, until cake pulls away from pan and is brown on top. (A thin-bladed knife inserted into the center will come out clean when it is done.) Cool 30 minutes, then cut into wedges sprinkling each with powdered sugar if desired.

Verdict?
This is one of my new favourite cakes. Even bite is filled with soft caramelised apple crunch and its moist and can be eaten anytime during the day ;-)

I am going to be trite here and say something you have heard a million times recently:
I cant believe its almost Christmas! And I cant believe another year has gone by!
What an eventful revolution around the sun it has been - so many changes, laughter, tears, joy, personal growth (which I wish there were more of!) and blessings. Another year of Gods faithfulness.
What have I been up to apart from humming Disney songs (thanks to all those people who changed their facebook profile to Disney characters!) and eating buttered corns?

Well, Ive signed up for this website which requires me to fill in my personal information like what I do in my spare time and what my daily routine is like. I wrote about which type of people I am compatible and can get along with. Things I cant stand in a person. You get the picture. I am trying to be matched and connected with the people in this city.
I mean to me, this seems like the last resort. Especially if you are a bit desperate and just cant find the one? So, today I met up with a potential match after work. I went over to the that persons place actually.

Friends, I dont know what youre thinking, but I am looking for a flatmate/roommate of course! Im sorry, I didnt mean to lead you on. To think that this is some juicy post. But I just couldnt stop chuckling to myself when I was filling out the flatmate finder form. This is just a bit funny to me.
But yes, I am moving. Again. Its hard. Its tiring. Its oh-very-exciting. The house I saw tonight wasnt the one unfortunately. It was nice and warm. But it needs to work on its hygiene a little bit to be considered a contender.
Lets hope the next few ones I see will be good! Im dreaming about a light filled kitchen with some mango trees in the backyard.

When life dont give you enough bananas, you can just use mangoes. Truly.
I was having a dilemma when I was making my usual banana cake weeks ago, only to find at the last minute that one banana was missing! Calm down. Quick, think of your feet! What do I have. Mangoes! Now, where have I heard about mango bread before? Thanks Deb! I remember she said that mango bread is the Hawaiians answer to our banana bread!
I used my usual banana bread recipe and just substituted a banana for 1 small mango. I also added in some nutmeg and cinnamon.

The verdict? This is like eating the most fragrant piece of cake ever. When I took a bite, I was thinking, This tastes sooo pretty. Weird I know. But the mango and nutmeg add much perfume to this banana bread that I can just imagine having this with a cup tea with my future potential flatmates in our mango-tree filled backyard.
Banana Mango Cake
Inspired by How to be a Domestic Goddess
- 175g plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 50g unsalted butter, melted
- 50ml grapeseed oil (or similar neutral cooking oil)
- 1/4 cup yoghurt (I used greek yoghurt)
- 150g sugar
- 2 large eggs
- 3 small, very ripe bananas (about 300g weighed without skin), mashed
- 1 medium sized mango (Updated 8/12/2010: its Mango not Banana - sorry for the typo!)
- (optional) a handful of chopped pecans (just because I found them in the pantry)
- 1 teaspoon vanilla extract
- 1/2 tsp ground nutmeg
- 1/2 tsp cinnamon
2. Put the flour, baking powder, bicarb and salt in a medium-sized bowl and, using your hands or a wooden spoon, combine well.
3. In a large bowl, mix the melted butter, grapeseed oil, yoghurt and sugar and beat until blended. Beat in the eggs one at a time, then the mashed bananas and mangoes (cut into small cubes)
4. Then, with your wooden spoon, stir in the pecans (optional) and vanilla extract. Add the flour mixture, a third at a time, stirring well after each bit.
5. Scrape into the loaf tin and bake in the middle of the oven for 1-1 1/4 hours. When its ready, an inserted toothpick or fine skewer should come out cleanish.
6. Leave in the tin on a rack to cool, and eat thickly or thinly sliced, as you prefer.

Apologies for the brief absence as Ive been away on holiday and am just about catching up with everything. I baked this last month but didnt get a chance to blog about it. I love baking with bananas and Im always looking for a new recipe. This is one that I found online but adapted it to my use. I was intrigued by the frosting which involved cooking milk and adding flour. It was quite a nice frosting which was not overly sweet. The cake was wonderfully moist and you can clearly taste the banana and the walnuts. The chocolate chips added a delicious chocolate hit and the frosting brought it all together.
Im sending this to the No Waste Food Challenge hosted by Elizabeth from Elizabeths Kitchen Diary. This recipe used up rapidly ripening bananas and some leftover yoghurt.

For the cake
215g flour
1 teaspoon bicarbonate of soda
113g butter
180g castersugar
120g brown sugar
2 eggs
3 bananas
150mls yoghurt
200g chocolate chips
130g chopped walnuts
For the frosting
250mls milk
5 tablespoons flour
1 teaspoon vanilla extract
226gbutter
200g caster sugar
- Preheat the oven to 180C.
- Cream the butter and sugars for a few minutes.
- Add the eggs and mix well.
- Add in the mashed bananas.
- Alternate adding the flour+bicarbonate of soda and yoghurt until everything is incorporated.
- Add in the walnuts and chocolate chips.
- Divide the batter into 2 sandwich tins and bake for approximately 25-20 minutes or until golden brown and a skewer inserted into the centre comes out clean.
- To make the frosting, whisk the flour into the milk over a medium heat until the mixture thickens.
- Remove from the heat and allow to cool.
- Cream the butter and sugar and add the vanilla extract.
- Add the cooled milk/flour mixture to the butter mixture and beat on high in an electric mixer until smooth.

This is honestly the best cake Ive eaten in a while and thats saying a lot! It came about by chance as I couldnt decide what to bake but I knew I wanted to bake with bananas. I didnt want to bake another banana muffin so I thought a cake would be better. I had a discussion with one of my work colleagues who loves cake as much as I do and we created this cake together by discussing what ingredients she wanted in the cake!! I said I wanted to use bananas and she wanted chocolate, walnuts, honey and maple syrup. I thought about it and decided that I could make it work so I gave it a go! The results were truly amazing. I incorporated everything she wanted in the cake and added a cream cheese frosting as well. The cake was really moist and full of banana flavour. You can taste the walnuts and the chocolate chips in there which also added a depth of texture to the cake. Unfortunately you cant really taste the honey but you can clearly taste the maple syrup cream cheese frosting.
The following week, my colleague who helped me create the cake told me what happened when she took a slice home for her house mate. She described the cake to her housemate who did not look impressed particularly as she does not like bananas. However, she decided to have a taste and after a few bites said "if Id known it was going to be so good, Id have taken it to bed with me!!" Thats honestly how I feel about this cake as well and Im definitely going to have to bake it again.

For the cake
250g plain flour
100g brown sugar
1 tablespoon baking powder
1 teaspoon bicarbonate of soda
3 or 4 ripe bananas
250mls milk
80mls vegetable oil
2 eggs
100g chocolate chips
150g walnuts ( I left them whole for extra crunch but you can chop them up but not too finely!)
60ml honey
For the frosting
100g butter
100g light muscovado sugar
85mls maple syrup
220g cream cheese
To decorate
20-25g toasted walnuts, roughly chopped
- Preheat oven to 180C.
- Grease and line 2 x 18cm round baking tins.
- Sift the flour, sugar, baking powder and bicarbonate of soda in a medium sized bowl and set aside.
- In a large bowl, roughly mash the bananas with a fork.
- Add in the milk, vegetable oil, honey and milk and mix well.
- Add the dry ingredients to the wet ingredients and mix.
- Finally stir in the chocolate chips and walnuts.
- Divide the batter evenly into the cake tins and bake for approximately 35-40 minutes or until golden brown and a skewer inserted into the centre comes out clean.
- Place the remaining walnuts for the topping in the hot oven and roast for about 5-7 minutes making sure that they dont burn.
- Allow the cakes to cool completely before decorating.
- To make the frosting, beat the butter and sugar until smooth.
- Add in the cream cheese and maple syrup and continue beating until very smooth.
- Place a generous layer of frosting on top of the first layer of cake. Place the second layer on top and spread the remaining frosting on top of the cake.
- Sprinkle with the toasted, roughly chopped walnuts.
