I took a mini vacation with my boyfriend this past weekend to Charleston, SC. I love Charleston for so many reasons and one of them is the berry cobbler at Kaminskys on Market St. My absolute favorite dessert is berry crisp and every time I bake a berry crisp or cobbler I compare it to Kaminskys. Served in the bowl that it was baked in, it mixes blueberries, blackberries and raspberries with a buttery topping and a scoop of vanilla ice cream. It has taken years to find a recipe that is as a good as the Kaminskys berry cobbler, much less better. This recipe is very similar but the pie crust base paired with a blackberry, raspberry, blueberry filling and crispy, buttery oat topping make this delicious dessert even better than Kaminskys!

Berry Crisp
makes one pie sized crisp or 8 ramekins

1 refrigerated pie crust

for the berry filling:
5 c. berries
1/8 c. cornstarch
1 tsp lemon zest
1 tsp vanilla
1/2 tsp cinnamon
3/4 c.- 1 c. sugar, depending how sweet your berries are

for the crispy topping:
2/3 c. brown sugar
3/4 c. oats
1/2 c. all-purpose flour
1 tsp cinnamon
6 tbsp butter, softened

Preheat oven to 375°F. 


Line each ramekin with 1/8 of pie crust dough. For the berry filling, mix together berries, cornstarch, lemon zest, vanilla, cinnamon and sugar. Let the berry mixture sit for at least an hour so the berries get a good sugary coating. Spread berry mixture evenly between the 8 ramekins (leaving about 1/2 inch for the topping). For the topping, mix together the sugar, oats, flour, cinnamon and butter until combined. Drop spoonfuls of the topping on top of the berry mixture and bake pie size for 40- 50 minutes and ramekin sized for 20-30 minutes or until the edges start bubbling. Serve with a couple scoops of vanilla ice cream.

Banana and Berry Lemon Muffins



The sun is shining and the daffodils are blooming. Spring has definitely arrived. These muffins are perfect for spring as its full of berries, banana and lemon. They are moist and fruity and you definitely get some of your five a day in this. I adapted a muffin recipe from BBC good Food and used up leftover fruit that I had. It was also a good chance to try out the lemon extract paste from Taylor & Colledge. They kindly sent me a range of their new flavour pastes to try. The range includes vanilla bean, lavender, lemon, coconut, almond and peppermint. They come in a handy tube and its very easy to use with no mess. The lemon one smells really nice and lemony and the paste is a good consistency - not too thick and not too thin. These are a great way to add flavour to your bakes.

Makes 12 muffins

250g flour
115g brown sugar
1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
3 ripe bananas
125mls vegetable oil
60mls milk
60mls honey
2 eggs, lightly beaten
85g blueberries
220g strawberries - keep aside about 6 or 7 strawberries to put on top of the muffin before baking
1/2 teaspoon lemon paste


  • Preheat the oven to 180C. 
  • In a medium sized bowl, mix together the flour, sugar, baking powder and bicarbonate of soda and set aside.
  • In a large bowl, roughly mash the bananas with a fork.
  • Add the vegetable oil, milk, honey and eggs.
  • Add in the flour mixture followed by the lemon paste.
  • Stir gently until just combined - be careful not to overmix.
  • Add in the strawberries and blueberries.
  • Divide the mixture into 12 muffin cases
  • Sprinkle the tops with the reserved, chopped strawberries and bake in the oven for about 20 minutes or until golden brown and a skewer inserted into the centre comes out clean.

Whom ever invented cheesecake is simply brilliant! Completely and honestly brilliant.  There are so many wonderful flavors and special additions that you can develop into a cheesecake.  It can be sweet or a savory.  No matter what the flavor it is always decadent and delicious. And a cheesecake is the perfect kind of cake to celebrate a special occasion - especially a 15th wedding anniversary! 

 

 Today we celebrate the beautiful Camilla Mann of the food blog, Culinary Adventures with Camilla,  and her marriage to her beloved hubby of 15 blissful years with all things CHEESECAKE.  26 of us passionate food bloggers have gotten together and brain-stormed, created and baked to our little hearts content all things CHEESECAKE.  Sweet ones, salty ones, mini and large are all being featured together in unison to honor and rejoice over the Manns 15 years of marriage.  The Manns really like cheesecake.  Can you blame them?! I cant. 


I made a batch of Berry Cheesecake Bars just for todays event. I love the taste of berries and cheesecake served together so I was delighted to find this recipe which bakes berries right into the cheesecake.   Instead of making a cheesecake in the traditional form using a spring form pan, this recipe is created into bars using a 9x13 pan.   The crust is made out of a delicious mixture of flour, sugar, rolled oats and butter.  Simple ingredients coming together to make a wonderful foundation for these bars.  The filling only requires 2, 8oz. blocks of cream cheese compared to the normal 3-4 blocks in a spring form size cake.  And you can choose to add in lemon juice to provide a fresh tartness to the bars or opt out of such an addition. Completely up to you!  The berries that you use in this recipe can be fresh or frozen - it all depends on what is available to you and your preference.

 

I present to you a wonderful recipe for cheesecake bars packed with berries and full of delicious-ness.  Happy 15th Camilla and Jake!  Wishing you both many, many more years to come of your beautiful marriage along side an abundance of CHEESECAKES!! :-)

Berry Cheesecake Bars 
      (recipe from Beauty and Bedlam)

Crust ingredients:
1 1/4 cup all purpose flour
1 cup sugar
1 cup rolled oats
3/4 tsp baking powder
2/3 cup salted butter, melted 

Filling ingredients:
(2) 8oz. blocks cream cheese, softened
2/3 cup sugar
2 Tbsp all purpose flour  
4 eggs
1 tsp vanilla extract 
2 TBSP fresh lemon juice - optional
2-4 cups mixed berries, fresh or frozen


Preheat oven to 375.  Grease a 9x13 pan and set aside.  Prepare crust - in a large bowl combine crust ingredients -  flour, sugar, rolled oats and baking powder.  Mix well all together.  Pour in melted butter and carefully stir all together.  

Gently press crust mixture evenly into prepared pan with a plastic baggie over your hand (the baggie prevents the mixture from sticking to your hands).  Bake crust for about 15 minutes or until crust is golden brown.  Cool crust for 30 minutes.  Reduce oven heat to 325.

Sprinkle berries evenly over cooled crust.  Make filling by beating softened cream cheese until light and creamy in a large bowl.  Add in sugar and 2 Tbsp flour. Beat well all together. 

Add in eggs, one at a time - beating well with each addition.  Add in vanilla extract and lemon juice.  Once all has been mixed well together pour filling mixture over berry layer and place into 325 oven.  Bake for 40-50 minutes or until knife inserted into middle comes out clean and center feels firm to the touch.  

Cool cheesecake for 2 hours before placing in refrigerator to continue to cool for at least 3 more hours.   Cut into bars and serve.  Enjoy!!

When you throw a few fruits in a bowl and sprinkle them with raw sugar, does it qualify as a recipe?  Well, Im going to count it as one because I love quick, simple, delicious recipes, and this one meets all the criteria!

My mother-in-law introduced me to sugar in the raw (or turbinado sugar) many years ago.  I cant believe I lived so many years of my life without it!  I dont use tons of it ever, mostly just for sprinkling.  I love the crunch and texture it adds to recipes!  I put it on quick breads, (heres my hands-down favorite banana bread recipe) cookies, pies, just about any dessert.  Its also a quick sweetener for fruit.  You can throw just about any kind of fruit together, sprinkle a bit of raw sugar on it, and youve got yourself a fresh, easy summer salad.

My boys are berry lovers!  Theyre probably their favorite fruits, and I love how healthy they are.  Strawberries are very affordable this time of year, so we eat and eat and eat them.  Raspberries and blackberries arent so cheap to buy fresh, so guess what?  I use frozen.  And they work perfectly!  If you live by a WinCo, then buy your frozen berries there.  I got the blackberries for under $2, and the raspberries for under $3!  Id used them last week for some homemade triple berry jam, (yes, I use frozen berries in my jam) and had leftovers.  So, they got thrown in the salad.  The tart berry flavors are sweetened up just a bit by the raw sugar, and the bananas add a bit of mild sweetness as well.  The flavors work perfectly together!  But just as I said before, you can really cant go wrong with mixing it up with all kinds of different fruits

So, thats the "recipe".  Just cut up your fresh strawberries and bananas, throw in some frozen raspberries and blackberries, sprinkle with sugar, toss, and serve.  You can let the salad sit for 5-10 minutes before serving  to allow the frozen berries to thaw a bit.

This cake can be considered as one of the milestones in my baking adventures. (Oh Boy, I am so good at making myself sound important!) I started baking cakes rather early. Late school days, as far as I remember. It was with my mothers help, who is a meticulous baker. Also, she has a degree in Home Science, so she used to see to it, that we used the correct amount of all ingredients. I always used to enjoy it, although it sometimes used to be a tiring experience. Because
a) We didnt have a hand-held blender then. My mother still doesnt. Turning the batter by hand can definitely take the sweat out of you towards the end.
b) Being very particular about the quantity of the stuff that goes into it, checking whether none of the utensils/spoons are wet, making sure that you turn the batter always only in one direction can at times be strenuous for the brain.
But as I said, it still used to be fun. Also, the delicious cakes that then used to come out of the oven (which, by the way, was a basic model with no temperature regulator) were always so delicious, that we (my younger sister and I) would look always forward to the next baking session.

So, this particular cake, that I have baked for the Jihva for Ingredients event, was the one which shook the basic foundation of cake-baking for me. It was N, my ex-colleague in UK (French by birth and tired of all the Froggie jokes & presents), who gave me this recipe. By the way, she did not really give me the recipe, she just shouted it out from across the desks. Moreover, the quantities were all approximate. Like she said (read yelled): Two-three eggs. Two-three eggs??? How can anybody be so casual about this? It has to be either two OR three eggs. Same was the case with baking powder. She said that she always used self raising flour for this. But what if I want to use regular flour? Well, I had to work it out myself.

All said and done, N was very very charming. And so is this cake. And the recipe is more so, because it does not require any measuring cups or spoons. What do you measure the ingredients with then? Well, yoghurt pots. Thats right. Yoghurt pots. To be precise, a yoghurt pot. You use the same pot, which has the yoghurt that would go into this cake. Great, isnt it?
And yes, N, this post is dedicated to you.

Recipe for Easy Yoghurt Cake

In the centre: Strawberry yoghurt;
In the outer circle, clockwise from top: egg, flour, sugar, egg, oil, sugar, egg, flour, flour

Ingredients:

1 pot strawberry yoghurt with real strawberry pieces (I assume that the quantity is 150g. everywhere.)
3 pots self-raising flour (I used two pots white and one pot wholewheat.)
2 pots sugar
½ pot vegetable oil (I used sunflower.)
1 egg (as opposed to the three featured in the earlier picture as well as in the introduction)

Method:


1. Pre-heat the oven to 180°C.
2. Grease a loaf tin. (I use one made of silicone. Can it technically be called a tin?) Line the base with greaseproof paper, if you like.
3. Beat the egg in a bowl.
4. Add the yoghurt. Measure sugar and oil with the same pot. Add them too and combine well.
5. Measure the self-raising flour again with the same pot, add to the batter and mix thoroughly. You could add all of it in one go, in case using a hand-held mixer. If turning the batter by hand, adding two spoonfuls at a time makes it much easier.
6. Pour the batter into the prepared tin and bake for 35 minutes or until a skewer/knife inserted in the centre of the cake comes out clean.
7. Take the tin out of the oven and let it cool for five minutes.
8. Turn the cake out on a wire rack and cool completely before serving/storing in an airtight container.

Easy? I told you so.

Strawberry Yoghurt cake

Some handy Notes:
1. In case not using self-raising flour, adding 2 tsp of baking powder to the regular flour gives the same results.
2. You could use yoghurt with any fruit. My personal choice, however, is always strawberry.

Im backkk! I know you missed me or at least my treats. Honestly, these berry crumble bars were too good not to share. Berries are the one millionth reason I love summer. When I walked into the grocery store today, I had the choice of raspberries, blueberries, strawberries or blackberries... all in one place! Im like a pack rat when berry season comes around, I buy a ton and throw them in the freezer to find them a year later and make bars like these. Ha just kidding, I used fresh berries to make these but I will not think twice about making them again this fall with frozen berries. These bars have a buttery, shortbread crust, layered with sweet gooey berries, and a sprinkle of crumble on top... it doesnt get much easier. The hardest part of these bars is waiting for them to completely cool before cutting into them. I say that wait time is only necessary if these bars are going to make it out of your kitchen because Im not sure mine will. I used blackberries and raspberries in these bars but strawberries or blueberries or any mix of them would work.

Berry Crumble Bars
makes 9x13 pan

for the berry layer:
5 c. berries (any mix of strawberries, raspberries, blackberries or blueberries)
juice of 1 lemon (about 1/4 c.)
1/4-1/2 c. sugar, depending on sweetness of berries
4 tsp of cornstarch (or 8 tbsp of all-purpose flour)

for the crumble:
1 c. sugar
1 tsp baking powder
3 c. all-purpose flour
1 c. cold, unsalted butter -- grated
1 egg
1/4 tsp salt
zest of 1 lemon

Preheat the oven to 375°F. Line or grease a 9x13 pan.


Stir together berries, lemon juice, sugar and cornstarch. Set aside. 


In a medium bowl, whisk together sugar, baking powder, and flour. Using a pasty blender or your hands, mix the cold, grated butter and the egg into the flour mixture until it is crumbly. Spread half of this mixture in the 9x13 pan and pat down. Evenly spread the berry mixture over the crust. Sprinkle the remaining flour/butter mixture on top of the berry layer. Bake for 40-50 minutes or until berries are bubbly and crust is slightly golden. Cool bars completely before cutting into squares.
